I went for a walk in the rain, but I brought an umbrella so I don't know if that counts.

Anyway, I too was thinking it was most likely related to stress. Not that switching to lactose free milk and such would do you any harm.

yuo know, it could be what we call traveling-stomach. when you're stressed about something, i get it some hours before going to airports and travelling stuff (it goes away when i get to the airport), like nervous and shit.

Normally I'd still be up at 2 am but I'm working on getting my sleep schedule back to a reasonable standard.

Despite what Eldo said, to get TRULY high quality grainy bread like what you show is not so easy. There's a lot of whole grain bread variations, a lot of small bakeries trying to do the right thing and even getting in shops, but the truly great bread in the style of Northern Europe ain't so easy to find. We mainly get knock-offs with flour that's way too finely ground and/or with too low gluten content to get the tooth feel one craves. Good whole grain bread should put up a fight when you bite into it....

I'm not enough of a bread connoisseur to judge relative levels of gluten.

If it's squishy it ain't Norc approved. It should either have a strong chew under your tooth due to large chunks of whole grain, or have enough strength that you kind of have to tear it with your teeth. Preferably both. That bread looked like both. I have yet to find a steady supply of top notch grainy bread, and New York is one of the bread capitals of the States.

100% agreed Halfwise. And no dough conditioners that keep is spongy and moist for a month on the shelf. Real bread should be bought fresh and be get hard as it ages. Unfortunately even the bakeries who bake fresh here tend to put in the conditioners because Americans expect it to be shelf-stable.
