He snaps a lot in the book, its part of his personality and everyone knows it- "dont meddle in the affairs of wizards they are subtle and quick to anger" or Frodo's "quick to anger, quick to laugh".
When their crabbit is so well known there is a world wide saying about it then I'd say it was an obvious trait of the wizards, and Gandalf exemplifies it - whether its losing it at Grima or just getting wound up by Frodo failing to answer his door.
