Minnesota got a much higher concentration of Scandinavians then the rest of the country, though. Scottish immigrants concentrated more in the South, while the Irish wound up all over. Of course, the era of mass immigration from Europe ended about a century ago, and there's been so much intermarriage and assimilation since then that relatively few European-Americans can pinpoint a single country as their family's original home.

We can get lutefisk and lefse at the grocery store around Christmastime. Haven't tried it though.

You can? I'll not claim lutefisk is worth it. People kind of eat it for the accompaniments. Lefse is good, but it's not very special on it's own. It's kind of like a piece of bread you have with your dinner. Though you can have other stuff on it, I guess.

remember that Minnesota gave us the movie Fargo (the culture crosses into North Dakota). So it's not like we don't view it as a strange ourselves. The Prairie Home Companion does a good job of encapsulating the culture; worth listening to if interested in how Scandinavia has morphed and mutated.

The only other one I can think of is gjetost cheese. Which I have had and is wonderful.

You mean geitost? Yeah, that can be pretty great. Particularily with some raspberry jam.
Actually, I just remembered. If you want to give lefser a go, try it with butter, sugar and cinnamon. That's pretty good.
