I would tend to think that's as much a gimmick as anything else though. We do have some really good raw ingredients in our cuisine, great fish and so on. Though I think the most basic representation of it can perhaps be a bit dull. It's not a strong flavour cuisine, to put it that way. It's interesting to see the twists they give it. (I'm not sure you can call blood oranges nordic. (Definitely delicious though.)
