For some reason the first name that springs to mind is that of Meriadoc. I would love to sit down with him in his later years, talk over his early adventures, his continued links with the Rohirrim and those he met. Even more, as someone who then went on to be a leading light back within the hobbit community I'd love to get his take on how his experiences shaped the lead he gave them, how it differed from who he would have been otherwise. (And a groaning table, laden with several meals worth of food has nothing to do with it!)

I think the hobbit view on everything would be fascinating and from Merry you'd get both the view of the folk involved, but also the perceptions of those on the sidelines. I think the nature of all people, that keeps them focused on how events effect them, always reducing it to the personal effect is entertaining.
