Is it true that Highlanders used to wear shoes called 'quarrants' kind of pumps made out of raw cowhide, that looked like the people were wearing pigeon feet and smelled like something rotten? and kilts were so short they would expose the er.. thigh area? and other bits a lady shouldnt mention.

What! Kilts, the modern version is a Victorian invention. Following the Jacobite uprisings tartan and our language, Gaelic was made illegal on pain of death.
The whole different tartans for different clans things is also largely an invention. There were diffrences between the original garments, but realted mainly to location and availbality of dyes more than making some statement.
The proper kilt is just a huge square of plaid, its clothing, bedding and used for carrying (its very strong and warm in the cold and cool in the heat, and its waterproof-its an incredibly useful garment in the harsh landscape round here). You pretty much lived in it back in the day.
The big squares of plaid you can buy now for using as a kilt didn't come about till the 1790's, but it is based on the Highland traditional of wearing a huge bit of plaid.
As for shoes as far as I am aware shoes were rare among the poor at all and cow hide, even rabbit would have been used for footwear if needed.

I was reading some stuff about Walter Scott and Edward Burt who wrote Letters from a Gentleman in the North of Scotland (1754), he described his travels and that description of the very short kilts, he called them 'quelts' and a taboo against pork in Scotland, is it true? it seems strange that Scottish people dont like pork.

Actually that pork thing true to a degree. No one is quite sure- if it did exist it died out in the 1700's somewhere- and was confined to Highlanders only. Its possibly just down to a lack of resources in the Highlands- it was a tough life in a very harsh environment.
